- watermelon: you'll need half a large watermelon to make enough drinks for four people. Look for one that is heavy for its size, as it will probably have high water content and be sweeter.
- lemons: you'll need 4 or 5 medium to large lemons.
- Monkfruit sweetener with erythritol: for natural sweetness without sugar.
- mint: optional
🔪 How to make Watermelon Lemonade with Monkfruit
Here's an overview of what you'll do to make this watermelon lemonade recipe perfectly. You'll find complete instructions in the recipe card at the end of this post.
- Either scoop out the watermelon flesh or remove the rind and cut it into large cubes. Add these to a blender container.
- Peel the lemons, remove any seeds and add the fruit to the blender as well. Add the Monkfruit sweetener and a cup or so of water and blend. You may have to use the tamper tool to force the fruit onto the blades.
- Strain the mixture by pouring it gradually through a sieve into a jar with a wide mouth or into a pitcher. Refrigerate to chill it thoroughly before enjoying every sweet sip!

Add a splash or two of sparkling water to make sparkling watermelon lemonade. Even more refreshing!
You can substitute honey for the Monkfruit sweetener if you like.

Sugar-free Watermelon Lemonade with Monkfruit

Ingredients
- 6 cups watermelon cubes, roughly chopped
- 4 - 5 medium lemons,
- ½ cup 0-calorie Monkfruit sweetener
- 1 - 2 cups cold water, optional
Instructions
- Remove the rind from half a large watermelon. Coarsely chop the flesh and transfer it to a blender container.
- Remove the peel and seeds from the lemons and add the fruit to the blender with the watermelon.
- Add 1 cup cold water (or more) to the blender to help it start blending the fruit.
- Add the Monkfruit to the blender and process until smooth.
- Pour the mixture through a sieve to strain the solids.
- Chill the lemonade or serve over ice. Garnish with lemon slices or a sprig of fresh mint.

Haven't tried it yet as I am pondering what I might do with the pulp that I am straining out. Can't quite see myself just composting it all. Any thoughts about what I might do with the pulp?
