- Greek yogurt: I like to choose a full-fat variety for the creamiest dressing and dip.

- buttermilk or whole milk: add a tablespoon or two of milk helps to thin the dressing to make it pourable.

Greek Yogurt Gorgonzola Dressing and Dip
Ingredients
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons apple cider vinegar, or white wine vinegar
- ¼ cup plain Greek yogurt
- ½ cup Gorgonzola cheese crumbles, at room temperature
- ¼ teaspoon sea salt or Kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons milk, or buttermilk (optional)
Instructions
- In a small bowl or jar, whisk the olive oil and vinegar together.
- Whisk in the Greek yogurt until smooth.
- Stir in Gorgonzola cheese crumbles.
- Leave the mixture a little chunky for a dip, if you like. For a pourable dressing add 2 - 3 tablespoons of milk or buttermilk, one tablespoon at a time until you've reached your desired consistency. A mini food processor will produce a smooth dressing.
