- chicken breasts: boneless, skinless. You can also use chicken strips or boneless, skinless chicken thighs if you prefer.
- bell peppers: any colour, but green bell peppers are not as sweet as yellow, orange or red bell peppers. Using a variety of colours makes this chicken fajitas dinner even more appetizing!
- red onion: adds a sweet yet tangy flavour.
- homemade fajita seasoning: use homemade fajita/taco seasoning mix or see the list of seasonings in the recipe card below.
- tortillas: use corn tortillas, white corn tortillas or other gluten-free tortillas to keep this recipe gluten-free.
- favourite toppings: your choice! Offer avocado or guacamole, salsa or pico de gallo, sour cream, cilantro, and lime wedges for squeezing.

- Start by slicing the peppers and chicken into strips no more than ½ inch wide. You want them to cook at the same rate, so try to keep them roughly the same size. Slice the onion.
- In a large bowl, toss the chicken, peppers and onions with a small amount of oil, then sprinkle with fajita seasoning and toss until well coated.
- Brush or use an oil mister to coat the basket of your air fryer with a thin layer of oil. It's best to use an oil with a high smoke point, like avocado oil or grapeseed oil.
- Preheat your air fryer to 380°F. for 3 minutes.
- Add the mixture (chicken, peppers and onions) to the air fryer basket, shaking to distribute evenly. Depending on the size of your air fryer, you may have to cook these in two batches. Avoid overcrowding the basket.
- Air fry at 380°F. for 10 - 15 minutes, pausing, then removing the basket and shaking it to redistribute the fajita mixture every 4 minutes or so. Check the internal temperature of the thickest part of the chicken with an instant-read meat thermometer. It should register 165°F. to be safe.

All air fryers cook differently. This recipe was made in a Ninja air fryer. Use the recommended time in a recipe as a guide, adding or subtracting a few minutes.
The beauty of an air fryer is that you can easily pause it, remove the basket, give it a shake and check to see if your food is cooked. As I mentioned above, an instant-read meat thermometer is a useful tool to make sure your meat is cooked to a safe temperature.
👍🏼 Helpful Tips
Don't overcrowd your air fryer basket. If it's too full, the air won't have a chance to circulate properly, and your food will cook by steaming rather than frying.
Add lime juice after, not before. Lime juice adds a bright flavour to fajitas, but it's best to add a squeeze or two after they're cooked instead of before. Squeeze a little over the fajitas before serving or offer lime wedges on each plate.
🔁 Possible Variations
- Keep it colourful! I recommend using red, orange and yellow bell peppers as they have a naturally sweet flavour. However, green peppers add colour and flavour and you might like to add one of those, too.
- Substitute milder onions. If you don't care for red onions, substitute milder white onions. You can take the bite out of red onions by soaking them in ice water for 10 minutes. Pat dry before tossing them with oil and seasonings and adding to your air fryer.
- Customize your seasoning mix. You can customize the fajita seasoning to your preference by adjusting the amount of spices such as chili powder, cumin, paprika, and garlic powder.
- Offer lime slices. You can also add a squeeze of lime juice for an extra tangy kick.
