🛒 Ingredients for Chocolate Orange Oat Milk Pudding
- oat milk: store-bought or homemade (You can substitute other non-dairy milk, but oat milk makes a thick, rich pudding.)
- dark chocolate bar: regular or stevia-sweetened, dairy-free
- cocoa
- granulated sweetener: sugar or granulated Monkfruit
- cornstarch: or arrowroot starch, to thicken the pudding
- vanilla extract
- zest of one orange: this simple addition makes it taste like you've added Gran Marnier!
- pinch of salt
🔪 Instructions
- In a medium saucepan, combine the sweetener, cocoa, cornstarch and salt. Add the oat milk gradually, stirring until smooth.
- Over medium-low heat, stir constantly until the pudding starts to thicken. It will form bubbles around the edge. Once it coats the back of a metal spoon (in 5 - 8 minutes) add the chopped chocolate pieces.
- Over low heat, stir until the chocolate has melted and the pudding is smooth and thick.
- Remove from heat. Stir in the vanilla extract and the orange zest.
- Transfer to individual dessert glasses or ramekins. Garnish with more orange zest if you'd like.

⏲Storage Instructions
Once the pudding has cooled at room temperature, store it in the fridge. It will stay fresh for up to three days. I have not tried freezing this, but I suspect it would be fine. See this post Can You Freeze Pudding? It may change the texture, however.
